Flaky Amazing GF Buttermilk Biscuits

As a kid, mom used to use Pillsbury everything for holidays and the occasional dinner when she craved these pretty good raw dough, ready to go products. But until recently, I was never confident in making my own biscuits. I can now say that was ridiculous because they are so easy! I, of course, added my own twist to it. I hope you enjoy.

Make 10-12 biscuits


INGREDIENTS-

4 cups Bob's Red Mill 1 to 1 Baking Flour

4 teaspoons baking powder

1 1/2 teaspoons pink salt

1 teaspoon baking soda

2 Tbsp fresh thyme

1 cup organic unsalted butter, cut into cubes

1 1/2 cups organic buttermilk

1/4 cup unsalted organic butter, melted


INSTRUCTIONS-


Preheat oven to 450 degrees. Line a baking sheet with parchment paper. In a large bowl, combine the flour, baking powder, salt, fresh thyme and baking soda. Add cold butter, using your fingers to work the butter into the dry ingredients until it resembles coarse crumbs. Add buttermilk and stir using a rubber spatula until a soft dough forms.


Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough into a 1 1/4-inch-thick rectangle. Cut out 10-12 rounds, using a 2 1/2 square, heart, round cookie cutter Place biscuits onto the prepared baking sheet and place in the freezer for 15 minutes. Remove biscuits from freezer and brush the tops with the melted butter. Place into oven and bake for 15-18 minutes, or until golden brown. Serve warm with lots of butter, honey, or jam.
