TRY THIS RICE FOR A HEALTHIER ALTERNATIVE

Vegan Black Forbidden Rice- with pine nuts, baby tomatoes, fresh basil leaves, basil oil, and mirin


Ths rice is easy to cook, and very difficult to overcook too. Full of nutrients. A 1/2 cup serving of prepared black rice, made from about 1/4 cup of uncooked rice, contains 160 calories, 1 1/2 grams of fat, 34 grams of carbohydrates, 2 grams of fiber, 5 grams of protein, and 4 percent of iron.


Serves 4


Ingredients-

1 cup uncooked forbidden black rice, rinsed

1¾ cups water

3 Tbsp Mirin

Pink salt and black pepper, to taste

1 cup baby colorful heirloom tomatoes, cut in half

1/3 cup pine nuts

16 basil leaves, divided

1 Tbsp basil oil


Directions-

Combine the rice, water, and Mirin in a medium pot and bring to a boil. Cover, reduce the heat to low, and simmer for 30 minutes. Remove from the heat and let it sit, covered, for 10 more minutes. Drain if there’s excess water.



In a saute pan, heat the basil oil and add the pine nuts, baby tomatoes and half the basil leaves. Saute for 3 minutes. Add the rice and toss adding more salt and pepper if necessary. Squeeze the lemon over the rice and toss. Serve on a platter or on individual plates as a side or on the same plate as the rest of your meal and top with basil leaves. This goes great with chicken and fish.
