Artichoke Bruschetta- with honey peppers, crème fraiche and chives

I’ve served this at many events, and it is definitely a crowd pleaser. It’s light and goes great with just about any meal you’re serving. This would be a great way to start your holiday festivities. #holidays #thanksgiving #chirstmas #healthyappetizers

Makes 30-40 appetizers


Ingredients-

Artichoke Bruschetta, (recipe follows)

Crème Fraiche, (Alta Dena brand in 8 ounces)

1 bag Sourdough Croutons, my favorite is Asturi Brand Bruschettini (you can get online or at most large markets


Artichoke Bruschetta-

1 cup Artichoke Delights in water, (by Cynara, you can buy on Thrive Market), if you want to purchase in store buy Cara Mia 14.75 oz small jar of artichokes in water) drained

½ cup red bell pepper, roasted and diced (if you are rushed for time, you can purchase pre-roasted peppers in a jar, Mezzetta is my favorite brand)

2 tablespoons extra virgin olive oil

2 teaspoons honey

1 tablespoon lemon juice

½ teaspoon black pepper

Pink Salt and Black Pepper, to taste

Garnish- chopped chives


Directions-

Chop the artichokes coarsely and place in a medium sized bowl, or in a small food processor add the artichoke, peppers, honey, olive oil, lemon juice, salt and pepper, pulsing until it’s coarse, do not over mix. If you are hand chopping, dice the peppers in small ¼ inch sized pieces and add to the bowl with hand chopped artichokes. Add the olive oil, lemon, honey, salt and black pepper and mix well and set aside.



Assembly-

First spread a light amount of the crème fraiche on the sourdough croutons, then top with the artichoke bruschetta. Sprinkle with the chopped chives. If you are only having a small number of guests, the artichoke bruschetta ingredients will keep for a week in a tight jar, or you can add any these ingredients to your favorite sandwich.
